Smørbrød—It’s Not “Just” an Open-Faced Sandwich

and imaginative combinations of food.” Join us as we talk about the
“musts’”of
preparing a flavorful, beautiful, and healthy open-faced sandwich—Scandinavian
style! This class will be from 9:00 a.m. to noon, and there will be an
additional ingredients fee.

There is More to Lefse Than Potatoes!

Students will learn to prepare Hardanger lefse as served at past
Vesterheim Food Fests; dessert lefse as found on many coffee
tables in Norway;
and, of course, potato lefse. An amazing lefse hors d’oeuvre
will be served.
This class will be from 9:00 a.m. to noon. There will be an
additional ingredients fee.

The Seven Cookies of Christmas

From 9:00 a.m. to noon students will learn how to make sandbakkels,
krumkaker, and berlinerkranser. From 1:00 p.m. to 4:00
p.m. students will learn how
to make rosettes, fattigman, goro, and sirupssnipper.
There will be an additional ingredients fee.

November 8 | $35 members / $50 non-members for one session
or $60 members/$70 non-members for both sessions
Darlene Fossum-Martin, of Decorah, Iowa, says her cooking style is shaped by the Scandinavian cuisine of her ancestors. Although she holds a degree in home economics and education, she says her strengths in Scandinavian—especially Norwegian—cooking came from the women in her family and community, as well as the years she spent living in Norway and traveling in Scandinavia. Darlene teaches traditional Norwegian food classes in adult education and summer programming for children of all ages throughout Iowa, Minnesota, Wisconsin, and North Carolina. Darlene has also coordinated and led two Vesterheim folk-art study tours to Norway—one of which included a two-week traditional Norwegian cooking class at a folk high school in Voss.
